I use Jellyfin along with the iOS client Manet. It’s not the best UI for CarPlay, but it gets the job done.
Plexamp will do what you’re looking for. You’ll need to run the server component either on your as NAS or a VM with access to the music files
I believe symfonium might need your needs. It's a paid app, but only one time payment. It can utilize several methods to stream.
Avid Symphonium user here, would like an open source alternative but the app itself is great, runs off my Navidrome server like a dream

Emby has transcoding and audio only playback support for CarPlay
Well, Emby looked fine until I've set everything up and went to try it and it won't even let me unless I pay. I'll leave this one as a backup for later but thanks.
Jellyfin+jellify seem to be good open source options
Broken for CarPlay, unusable. Jellyfin stutters like hell when streaming to wireless CarPlay and Jellify stops playback after 2s. For now I've settled for Manet. But thatnks! Jellify looks good for music it just does not work for my use case.
Jellyfin is a direct fork of Emby so I wouldn't even bother with it.
Navidrome on your server with Nautiline (paid app) on your phone. It has a couple days of free trial to see if it works for you.
