"not guilty" can mean, he didn't do it, or else he was temporarily insane because he was in pain from his medical condition, or even Ed Snowden's "yeah I did it and it was illegal but at the end of the day I was right to do it and I think I can convince a jury of that." Or just the OJ Simpson "let's talk about something else for a while and change the subject" defense. It could be a lot of things. Nobody in the history of court has plead innocent. Thats not a thing. You can plead guilty, no contest, or not guilty.
