In this scenario, your dad just installs Jellyfin and logs in.
You've set up the reverse proxy to your server, its transparent to him.
You can update DNS records automatically so its also a fire and forget kind of thing.
But I guess, give your data to the corpos because its easier.

Tailscale would work as another user said. You could run TOR too. I've got a TOR service that I can SSH into for "plan b" if my VPN is down. It doesn't need port forwarding.

They want your IP or your phone. Use a VPN IP or TOR and they'll require a phone number. That's been my experience at least. I don't trust them.
Qbittorrent version 5.0+ has the settings in the web-ui so if you are setting it there you can ignore that part of your tutorial where it says to use qbittorrrent.conf (its the same).
You are correct about automatically appending trackers.
To verify its working you should be able to add a new torrent, look at its trackers and see the new .i2p trackers added. They can be a little slow to connect initially.
