I know it's not the most original choice, but I'm sticking to my guns: One Headlight is the best driving song you could ask for.
I'm going to hit you with a full playlist that I put together (as a CD) several years back. Can't remember the proper placement for Death Valley Blues offhand, but it works where I have it now.

Really the whole album is perfect for road trips through the desert but this is my first pick!
