Made and ate okonomiyaki for the first time. I took bits and pieces from recipes from Adam Liaw, Chef's Labo, and Just One Cookbook.

The result looks impressive for a first time! I find it hard to get the right balance of tastes.

I think my favourite one is in a little restaurant in Gion, Kyōto, where it is prepared in front of me on the teppan (鉄板) by the chef before being enjoyed piece by piece. You really eat it with all your senses, I love it.

It looks like an omelette with mayo and onion peel. That's said, I'd still eat it.

Dude, there's no explanation to why it tastes so good, it's unique and fantastic. The "onion skin" is bonito flakes and smell like fish food because it is, but together with all of the other ingredients is amazing.
