It was not my choice to get an iPhone but it’s what was provided to me so I’m rolling with it.

You're forced to use WebKit, and using something like Brave (which tbf is probably one of the better alternatives despite their history) only increases the number of parties you must trust, while mostly just being a reskin of Safari. If lack of good ad block (e.g. beyond DNS) is a deal breaker, Brave seems to be the only open source option.
