Haibane Renmei sets up a lot of questions, but I don't think it would have any satisfying answers. The world is a backdrop for the character arcs. Why did Kuu fly? It isn't explained, not to us or to Rakka, and the question eats at Rakka, which is the whole point. Death does not give reasons, it just is.
I don't really get this criticism. Doesn't the murder and the time travel happen in episode 1? From there until they get their hands on the IBN is kinda slow, but it's also building the mystery side of the story and introducing all the characters. I recently rewatched and there's so much foreshadowing, you could actually piece together the whole story before any of the action starts. So I'll defend the opinion that Steins;Gate is perfect and has no bad episodes or even wasted moments.

I'm staunchly sub-over-dub, but I'm not anti-dub. A good dub is a piece of art, it's just a different piece of art than the original work. Dubbing is very difficult to do right, especially for live action. It takes good writing to match the lip flaps, good acting to match the facial expressions, and good sound design to match the scene. Anyone can stick a couple bored actors in a studio and record a terrible audio track that sorta conveys the necessary information, but I wouldn't call that dubbing.
I really dislike dubs with celebrity film actors. Film acting is much more focused on screen presence, but there's nothing to see with a dub. A stage actor is generally a much better voice actor, because on stage you have to act so the people in the back can hear your emotions. Picking a big name just shows a lack of respect for the art of dubbing in my opinion, and it doesn't bode well for every other facet of the quality.

It's not just the graphics that improved in the last 20 years. Modern game engines created a floor of quality where input just works, basic configuration just works, autosave just works. All these little conveniences around the game itself that you barely think about, until you play a shooter from 20 years ago and the buttons are mapped weirdly and there's no way to remap.
