Nothing relevant ever comes from there except Celine Dion and maple syrup. Legit though, are you under the assumption that the instance only allows Canadian related communities? There's all kinds of C/s on there that aren't about Canada. And that doesn't matter with lemmy (much) in the first place. It only matters if you exclusively want to use the local feed. Your subscriptions feed doesn't have to be from that instance, and the all feed gives you access to anything anyone there has access to. As soon as you search for a community, the whole instance gets access to it via federation.
