Whenever someone brings up "believing in science" remind them that science isn’t a matter of belief, it's a matter of understanding. The world is the way it is whether you "believe" in it or not. The world is the way it is whether you understand it or not, and life is a lot easier when you understand the world around you.

Because they are willing to dig in their heels and reject evidence that doesn't fit their worldview, they assume that science-minded people are the same. They don't understand how "receive new data" and "refine or revise hypothesis" are important parts of the process. If they incorporated those steps, their belief system would implode.
