    Well if course I'm over exaggerating, but Windows does love to reinstall Edge no matter how many times I remove it

    It only reinstalls when there is a new version.

    You can disable the update by adding these to the host file:

    127.0.0.1 https://msedge.api.cdp.microsoft.com

    127.0.0.1 *.dl.delivery.mp.microsoft.com
