Don’t do potato peels but everything from broccoli stalks to mushroom stems work really good. Sometimes if there aren’t enough onion parts I add an onion. I peel pumpkins/squash that aren't roasted, and potatoes if they will be fried (very different texture and they are unhealthy anyway), what other vegetables do people peel normally?
